Food at Freshwater follows the rhythm of the plantation and the island around us. What we grow ourselves changes with the season, but the emphasis is always on fresh, local produce: coconuts, avocado, cocoa, tropical fruit, herbs and vegetables from the plantation, supplemented by produce from Santo, local fish when available, island-grown root crops such as kumala and taro, and mRestaurant sourced locally where practical.

The day provides the menu.

We do not run a large commercial kitchen with an endless menu. Instead, meals are built around what is fresh, what is available and what suits the day. Staying guests can take breakfast, lunch and dinner with us, while day visitors can join us for a Plantation Lunch as part of their visit or Bat Cave & Cocoa experience and the restaurant is open to a limited number local bookings for dinner. There is always a vegetarian option, and some things are deliberately kept simple and dependable: pizza is always available, along with lighter choices such as fruit, salads and kumala chips. That gives guests something familiar when they want it.
